The shank is made from young pork, pickled in the author’s marinade, which gives the dish mustard-tomato flavor with honey notes. The steering wheel is sappy and incredibly tender due to long-time cooking using sous-vide technology.
The product is ready to eat.
• Before cooking, it is advisable to keep the shank for some time (about 1 hour) at room temperature.
• Free the product from a vacuum package. Leave the sauce, it will be needed for giving a golden crust.
• Heat on a grill for 5-10 minutes, in а microwave for 5-7 minutes or in an oven at a temperature of 220 °C for 20-30 minutes (the time depends on the features of kitchen equipment). Periodically grease the shank with the sauce.
• Before serving, cover the shank with foil for 5 min.
Ingredients: pork shank (90%), drinking water, salt, sugar, spices (tomato powder, onion, paprika, garlic, sweet pepper, curry, cinnamon, black pepper), mustard, honey, stabilizer E451, natural flavoring smoke, acidity regulators Е262, Е330, flavor enhancer and aroma Е621, flavors (honey, lemon, nutmeg, chili, paprika), caramel.
Nutritional (food) and energy value (caloric content) 100 g of the product: proteins – 16 g, fats – 12-14 g, salt – 1.6 g; 165kcal (690kJ).
Storage conditions: at storage temperature from 0 °C to + 6 °C and relative humidity of the room not higher than 70-80%.
Expiry date under observance of storage conditions of the product packaged in a vacuum – 30 days. At a storage temperature of -12 °C – no more than 3 months, at a storage temperature of -18 °C – no more than 6 months.
