“Selyanski” pork ribs sous vide with baked eggplant salad for the company.
• Pork ribs “Country-style” sous vide – 3 kg
• Eggplant – 2 pcs
• Lettuce – 1/2 pcs
• Peking cabbage – 1/2 pcs
• Cherry tomatoes – 8 pcs
• Lemon – 1/2 pcs
Pork ribs “Country-style” sous vide free from package, grill on each side until you get the desired crust. Sauce remaining in the package from the ribs, use for filling eggplant.
Whole eggplants string on skewers and fry until soft. Still hot eggplants pour with cold water for a few minutes and then peel them off.
Cut the eggplants into cubes.
Heat sauce from ribs, add juice of half lemon if you wish.
Add sliced lettuce, cabbage and whole tomatoes to the eggplants. Dress up the salad with dressing.
Serve the ribs with the salad.
